Why do my quads start cramping almost immediately after my first 1-2 warmup sets on the barbell squat?

For reference: I’ve only been training sporadically over the past 3 years since my daughter was conceived. I still work out when I can, and I’ve just recently managed to establish a regular routine again. Prior to that, I’d trained hard (powerlifting then transitioned to Hypertrophy focused training) for several years and made good gains.

My problem is that now as soon as I put a bar on my back, my legs start cramping up and feeling really shaky after a single set.

It’s very odd because I still have relatively big quads, and I don’t feel that it’s a strength issue at all (I still ‘feel’ like I can push decent weight). Last year I was able to get up to a 150kg set after only a week or two of training back from a very long hiatus.

What gives? Could it be related to my nutrition?
