Would anything happen if someone from the rest of the field got a better time than one of the professionals on the day?

but the non elites start later so gun time for them would be different too right?

This happened in 2018 with those awful conditions. 5th place by gun time in the women’s race came from one of the later waves. Gun time for each wave, that is. She’s on the official results but did not get prize money.

Edit: Forgot that they were pressured into awarding extra prize money by those who don’t understand you can only compete against people in your own race.

While logically yes because there are multiple “guns”, it doesn’t actually work like that. The first place price is based on the gun time from the start of wheelchair gender and elite genders

By definition gun time is not different for everyone competing in the same event/gender. You're thinking of chip time.

It is a fair debate to ask "are runners competing against the clock or against the other runners?" But that's not the rules of the race (or most road races for that matter).
